Ingredients
Green bell peppers, scotch bonnet peppers, onions, palm oil, locust beans (iru), assorted meats (beef, offal, smoked fish), bouillon cubes, salt.
Recipe
- Blend green peppers and scotch bonnets into a smooth paste.
- Heat palm oil in a pot until it changes color to a dark hue (be careful not to overheat to the point of smoking).
- Fry finely chopped onions and locust beans in the oil until fragrant.
- Add the pepper blend and cook until the stew reduces and the oil begins to separate.
- Add precooked assorted meats and adjust the seasoning. Simmer until the meats are well integrated into the sauce.
- Serve with ofada rice (a local, aromatic, unpolished rice).
