Rice, tomatoes, onion, red pepper, vegetable oil, chicken or fish, spices (thyme, curry powder, ginger, garlic), chicken broth, scotch bonnet peppers, bay leaves.
Recipe
- Blend tomatoes, red peppers, onions, and scotch bonnet peppers into a smooth paste.
- In a large pot, heat oil and fry the tomato mixture with thyme, curry powder, and other spices for about 15 minutes.
- Add washed rice, chicken broth, and bay leaves. Cook on low heat until the rice is done.
- Serve your Jollof rice with fried chicken or grilled fish.
