Ingredients
Ground egusi (melon seeds), palm oil, assorted meats (beef, goat, fish, shrimp), spinach or bitter leaves, onions, tomatoes, peppers, stock, and seasonings (salt, pepper, bouillon cubes).
Recipe
- Heat palm oil in a pot, add finely chopped onions, and fry until translucent. Add ground egusi and stir fry for a few minutes.
- Add blended tomatoes and peppers to the pot. Cook until the tomato loses its raw taste.
- Add meat stock and cooked meats. Allow the soup to simmer for about 20 minutes, or until the oil begins to rise to the surface.
- Add chopped spinach or bitter leaves, adjust seasoning, and cook for another 5-10 minutes.
- Serve your Egusi soup hot with pounded yam, fufu, or garri.
